Made by the Taylor Brothers Farm in Meriden, New Hampshire, Evelyn’s Jack Cheese is a mild, semi-hard jack style cheese. This cheese is excellent for melting or snacking. Cheese is sold in 1/2 pound half wheels.

Oh by the way, Evelyn is a member of the herd and must be quite a special cow to have cheese named after her! Taylor Brothers Farm makes there cheese in small, 40 pound batches. They start by filling the processing tank with raw cow’s milk fresh from their milking parlor. Over the next 8 to 10 hours, they pasteurize the milk, add the appropriate enzymes and cultures depending on the variety of cheese, and pack and press the cheese curd into molds. They regularly turn the cheese to ensure proper drying, and seal it in wax one week after it is made.
