Spinach Salad

Salad:
1 cup chopped Celery
2 Tbsp chopped Green Onions
1 cup Mandarin Oranges, drained
Spinach, 1 bunch or bag

Salad Topping:
½ cup sliced Almonds
2-3 Tbsp Sugar

Dressing:
¼ cup Vegetable Oil
2 Tbsp Sugar
2 Tbsp Vinegar
1 Tbsp Parsley
½ teaspoon Salt
¼ teaspoon Pepper
Dash of Tabasco Sauce

  1. Wash, dry, and tear spinach into bite-size pieces. Combine with other salad ingredients (you can add 2 cups of oranges if you wish more citrus flavor).
  2. Mix dressing ingredients in a jar; shake well. Pour over salad just before serving.
  3. Combine almonds & sugar in a skillet over heat. Stir constantly until golden brown.
  4. Remove, cool, and sprinkle on salad.

Cooked Chicken Salad

2½ cups Chopped, Cooked Chicken
1½ cups Chopped Celery
1 can Cream of Mushroom Soup (undiluted)
2 teaspoons Lemon Juice
2 Tbsp grated Onion
2 Tbsp Mayonnaise
½ cup slivered Almonds
2 cups crushed Potato Chips
½ cup shredded Harman’s Really-Aged Cheddar Cheese

  1. Combine first 7 ingredients, blend well.
  2. Spoon into lightly- greased two-quart baking dish.
  3. Sprinkle with Chips.
  4. Bake at 350º for 20 minutes.
  5. Sprinkle with Cheddar Cheese and return to oven until Cheese melts. Serve warm.

¾ cup Catsup
½ cup Vinegar
¾ cup Sugar
4 teaspoons Worcestershire Sauce
1 cup Oil

  1. Mix ingredients well in a jar, bowl, or blender until smooth.
  2. Use with Taco Salad or with green salads.

¾ cup Salad Oil
¼ cup Wine Vinegar

  1. Blend thoroughly and serve over your favorite tossed salad.

1 cup Vermont Maple Syrup – Dark Amber
½ cup Catsup
½ cup Apple Cider Vinegar
½ cup Canola Oil
1 teaspoon minced Garlic
2 teaspoons Horseradish

  1. Combine all ingredients well.
  2. Refrigerate.
  3. Shake before serving. Use for green salads.
