Crispy Fried Chicken Sandwich with Green Tomato Jalapeno Spicy Mayo and Slaw

Who doesn't love a crispy fried chicken sandwich with spicy mayo, creamy special sauce coleslaw and pickles all piled up on a toasted brioche bun? This one has a bit of a twist because we add our Green Tomato Jalapeno Pepper Jelly into the mix for a sweet spicy tangy punch.

Ingredients
  

Chicken

  • 4 Chicken Thighs Boneless Skinless

Chicken Marinade

  • 1 cup buttermilk
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt
  • 1 tsp Pepper

Chicken Breading

  • 1 cup flour
  • 1/2 cup corn starch
  • 1 Tbs Smoked Paprika
  • 1 Tbs Garlic Powder
  • 1 Tbs Onion Powder
  • 1/2 tsp Cayenne Pepper
  • 1 1/2 tsp Salt
  • 1 tsp Pepper

Slaw

  • 2 1/2 - 3 Cups Cabbage Finely Sliced/Shredded
  • 1/4 Red Onion Sliced Thin

Slaw Dressing

  • 1/2 Cup Mayonnaise
  • 1 Tbsp Yellow Mustard
  • 2 Tbsp Wozz! Green Tomato Jalapeno Spread
  • 1 1/2 Tbsp Vinegar Red Wine or Cider or White
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp cracked black pepper

Spicy Mayo Ingredients

  • 3 Tbsp Mayonnaise
  • 4 Tbsp Wozz! Green Tomato Jalapeno Spread

Other Ingredients

  • Vegetable Oil For Frying
  • 1-2 Dill Pickles Sliced
  • 4 Brioche Burger Buns
  • Sliced American Cheese optional

Instructions
 

Marinate Your Chicken and Prepare Breading

  • In a large bowl combine chicken marinade ingredients.
  • Add boneless chicken thighs and marinate overnight, for an hour or so, or you can use immediately*.
  • *I patted dry my boneless chicken thighs with paper towel before I placed in marinade. I used it right away and it turned out delicious.
  • In a medium shallow bowl, whisk together your chicken breading ingredients: flour, cornstarch, spices, salt and pepper.

Make Your Spicy Mayo (to spread on bottom bun)

  • In small bowl, stir together mayonnaise and Wozz! Green Tomato Jalapeno Pepper Jelly Spread and set aside.

Make Your Coleslaw and Coleslaw Dressing

  • Finely slice or shred your cabbage and red onion and combine in a medium bowl.
  • In a separate medium mixing bowl combine mayonnaise, mustard, Wozz! Green Tomato Jalapeno Spread, vinegar, spices and salt and pepper.
  • Toss the slaw with the dressing and set aside.

Get Your Oil Ready For Frying

  • In a large saucepan or pot, add enough vegetable oil to be able to submerge your chicken pieces.
  • Add a thermometer to side of pot and bring temperature to 350 degrees.
  • Adjust your stove temp from medium high heat to a lower temp if necessary to keep temperature around 350 degrees.

Dredge and Fry Your Chicken

  • Remove your chicken thighs from marinade and dredge in your flour mixture, pressing flour mixture into chicken to form a nice thorough coating.
  • Confirm that oil temperature is at 350 degrees, then transfer chicken to pan with hot oil.
  • Cook chicken pieces in oil for approximately 5-6 minutes or until outside is golden crispy and inside temp is 165 degrees.
  • If oil in pot does not completely cover chicken while frying you may need to turn your chicken after 2-3 minutes to fry both sides evenly.
  • Once chicken is done frying, transfer to paper towel lined plate. At this time if you want to add a slice of cheese, add it now while chicken is hot so it melts.

Assemble Your Crispy Chicken Sandwich!

  • In a medium skillet on stove top, quickly toast your brioche buns until warm and browned.
  • Add a good dollop of green tomato jalapeno spicy mayo to bottom of bun, top with fried chicken piece, creamy slaw, sliced pickles and top with bun. Feel free to add more Wozz! Green Tomato Jalapeno Spread if desired.
  • Serve hot. ENJOY! :)-
