
Cranberry Orange Wild Rice Salad
This Cranberry Orange Wild Rice Salad is made using our Cranberry Orange Cognac Chutney. It's a hearty salad with bright citrus pop and makes a nice side when served with grilled or baked chicken.
Ingredients
Salad Ingredients
- 1 cup Wild rice Blend uncooked
- 1/2 cup Wozz! Cranberry Orange Cognac Chutney
- 2 Tbsp Parsley chopped
- 12 sprigs Thyme leaves removed and stems discarded
- 1/4 cup roasted walnuts rough chop
- Zest of 1 orange
- 1 stalk celery chopped into small dice
- 3 spring onions sliced
- Salt and Pepper to taste
Dressing Ingredients
- 1/3 cup red wine vinegar
- 1/8 cup olive oil
- 1/2 Tbsp Dijon mustard
- Salt and Pepper to taste
Instructions
- Cook rice according to package directions, strain under cool water and set aside.
- In a large bowl mix together, rice and Wozz! Cranberry Orange Cognac Chutney, celery, parsley, thyme, walnuts, spring onion, zest of orange and salt and pepper.
- Toss with dressing and serve.
